A Snack To Pack

We're headed out to Moscow shortly and I wanted to prepare myself an easy, but fresh and nice snack to munch on while packing. I realized I had most of the ingredients in my fridge to make the Tsar Nicoulai Gold Pearl Trout Roe Traditional Signature Bite. A sour cream dip with cucumbers, herbs, lemon and shallots served with endive. Perfect. A fancy snack and a tasty way to get through some stuff left in the fridge.

Russians really love their chopped or sliced salads. A popular one is sliced cucumbers drenched in sour cream, garlic, and dill. I used to hate sour cream and I remember being scolded as a child by an old lady at church for this fact. What kind of Russian girl was I if I didn't love sour cream?! I can't remember who it was, but if she's reading this I hope she sees that I have changed my ways. Now, I happily lick the sour cream that sticks to the spoon.

This dip reminds me of the sliced cucumber salad. Only  with more sour cream. Which really makes it better. I didn't  like dill, either, back in the day, but making this I had to stop myself from putting in too much. Seriously, if that lady could only see me now!

Garnished with our bright, silky, and sweet trout roe on top of cucumber and lemon slices, this dish is just so cheery, fresh, and delicious. It would be perfect for having guests over - especially for an outdoor event. And it really did make the perfect packing snack.

Cucumber and Herb Sour Cream Dip with Gold Pearl Trout Roe


I grated the cucumber to keep the dip really chunky


About 1 1/2 cups sour cream
1/2 an English cucumber
Zest of half a lemon (reserve the lemon for juice)
Small handful of parsley, finely chopped
Small handful of dill, finely chopped
Small shallot, finely chopped
Endive spears for serving
Gold Pearl Trout Roe, cucumber and lemon slices for garnish




1. Peel the cucumber and grate into a bowl. Add the rest of the ingredients.

2. Squeeze some lemon juice into the bowl (hold sliced side up to avoid seeds getting into the bowl, or remove seeds from lemon first).

3. Mix it all up. Garnish with sliced cucumbers, lemon, and Gold Pearl Trout Roe and serve with endive spears (leave some trout roe on the side since everyone will go for it in their first couple endive dips).
