Sour Cream & Salsa Verde Caviar Dip
Serves 4 to 6 - Time: 15 minutes - Presentation: coupe or martini glasses
INGREDIENTS:
Salsa Verde
4 scallions, finely minced (about ½ cup)
2 Tbsp fresh dill, finely chopped
2 Tbsp fresh chives, finely chopped
1 Tbsp shallot, minced
2 Tbsp fresh parsley, finely chopped
3 Tbsp extra-virgin olive oil
2 Tbsp red wine vinegar
½ tsp kosher salt, plus more to taste
½ tsp freshly ground black pepper
Base & Topping
1 cup full-fat sour cream, cold
1–2 oz caviar + smoked roe
1 package water crackers, for serving
HOW TO:

Make the salsa verde: In a medium bowl, combine scallions, dill, chives, parsley, shallot, olive oil, red wine vinegar, salt, and pepper. Stir until glossy and well combined. Taste and adjust seasoning—remember the caviar adds salinity.

Assemble: Divide the cold sour cream between 2 coupe glasses or a small low bowl (about ½ cup each). Spoon 2–3 Tbsp salsa verde over each glass in a loose swirl.

Finish: Top each glass with caviar + smoked roe—use ½–1 oz per glass. Serve immediately with water crackers.
