Smashed Potatoes

INGREDIENTS
10 baby potatoes
Olive oil
Salt
Pepper
Caviar
Crème fraîche
Chives
HOW TO:
Boil the potatoes until they are soft. Strain them and dump them on a baking sheet with parchment paper. Smash them with a cup. Not too hard or they will crumble. Just enough to smash them down without breaking them. Drizzle them with olive oil, sprinkle salt and pepper, and put them in the oven at 500 degrees for 25 minutes, or until crispy and golden brown.
Add them to a plate, top with Crème fraîche, caviar, and chives, or get creative and add toppings of your choice!
