Tsar Nicoulai: A Legacy of Sustainable Sturgeon Farming in California
The only Eco-Certified Sturgeon Farm in America
Nestled in California's Sacramento Valley, Tsar Nicoulai is more than just a sturgeon farm; it's a testament to sustainable practices and a commitment to producing the highest quality caviar. Founded in 1984, the farm was designed with the sturgeon's well-being at its core, utilizing a natural, integrated system that prioritizes biodiversity and minimizes environmental impact.
Since 2014, when the Bolourchi family took over stewardship, Tsar Nicoulai has continued its dedication to sustainability, implementing state-of-the-art innovations to further optimize energy and water efficiency. This constant pursuit of improvement has resulted in a farm that operates with a minimal environmental footprint.
A Sturgeon-Friendly Environment:
The farm's success rests on a foundation of meticulous care for its sturgeon. A highly qualified and experienced team monitors the fish 24/7, ensuring optimal water quality, feeding, and growing conditions. Tsar Nicoulai stands apart by its unwavering commitment to natural practices, abstaining from the use of any antibiotics, growth hormones, pesticides, biocides, bioengineering, ionizing radiation, or fertilizers.
The sturgeon are fed a custom diet mimicking their natural diet, avoiding land-based proteins. Regular testing ensures the water and fish are free of heavy metals, and the meat is antibiotic and steroid-free. This dedication to purity translates to a healthy and thriving sturgeon population, allowing them to flourish in their pristine environment.
Caviar Production, a Celebration of Tradition and Innovation:
After six to ten years of nurturing, the female sturgeon reach maturity and are ready to produce caviar. The roe is harvested and processed on-site in a cutting-edge caviar-processing zone, adhering to traditional methods and eschewing synthetic preservatives. The 'malossal' process uses minimal salt, preserving the natural flavor and texture of the caviar.
A Sustainable Future for Tsar Nicoulai:
Tsar Nicoulai's commitment to sustainability goes beyond a single farm. The Bolourchi family recognizes the importance of passing on their legacy of responsible practices to future generations. They are actively involved in educating consumers and the industry about the benefits of sustainable caviar production.
By embracing a holistic approach that prioritizes environmental responsibility and animal welfare, Tsar Nicoulai sets a benchmark for sustainable aquaculture. It's a testament to the fact that high-quality caviar can be produced in harmony with nature, ensuring a future where both the sturgeon and the environment thrive.

Tsar Nicoulai's sprawling farm is a testament to the meticulous care and innovation that goes into sturgeon farming. The farm's experts oversee every stage of the process, from the spawning of sturgeon to the harvesting of their precious eggs and the smoking and packaging of their delicate flesh.
This comprehensive approach allows Tsar Nicoulai to guarantee the traceability and authenticity of its products. Each batch of caviar, roe and smoked fish can be traced back to its specific source, ensuring that customers receive only the finest and most sustainably sourced delicacies.
In addition to its exceptional locally produced caviar, Tsar Nicoulai also produces a delectable array of smoked fish products. The on-site kitchen utilizes every part of the sturgeon, transforming it into culinary masterpieces.
From savory smoked sturgeon pâté to tantalizing sturgeon jerky and even innovative sturgeon chips, Tsar Nicoulai's products showcase the versatility and flavor of this ancient fish. By maximizing the utilization of the sturgeon, the farm not only reduces waste but also offers a wide range of healthy and sustainable options for discerning palates.
Aquaponics saves energy, land, and water
Water conservation is a cornerstone of Tsar Nicoulai's innovative aquaculture farm. The farm's unique approach to water management has earned it recognition as a Green and Monterey Bay Aquarium Best Choice-rated practice.
Tsar Nicoulai's original water filtration system mimics the natural processes of the American River. Above-ground tanks and an organic pond filled with floating hyacinth plants create a biofilter that absorbs the effluent stream from the sturgeon. The hyacinth converts it into nitrates and organic bloom, purifying the water.
Pumps then circulate the water back into the system, achieving an impressive 80-90% efficiency. While some water loss occurs, it is replenished through a well. This system replicates Mother Nature's filtration mechanism, where currents collect hyacinth and return it to the soil. During winter, the hyacinth dies and is removed from the pond. The farm composts the hyacinth and replants it to maintain the biofilter. This continuous process ensures the system's effectiveness.
The farm is currently expanding its operations with 54 new tanks that will utilize a RAS system. This system is akin to a giant fish tank filter. By removing solids and purifying liquids, the RAS system reduces water usage by over 50% compared to the original 30 tanks. The solids removed from the RAS system can be used for soil, fertilizers, or sold to neighboring farms. This not only minimizes waste but also creates a sustainable revenue stream. Tsar Nicoulai's RAS system will be the first outdoor recirculating aquaculture system for sturgeon in the world. This pioneering technology demonstrates the farm's commitment to sustainability and innovation. By implementing these water-saving practices, Tsar Nicoulai is setting a new standard for aquaculture. The farm's dedication to environmental stewardship ensures a sustainable future for its operations and the industry as a whole.
